Pimbina is a small tangy red berry that grows wild in Quebec. It is mainly used to reduce spasms such as cramps, spasms after childbirth or painful colic. It is also used for the treatment of asthma and nervous disorders. The fruits and leaves can be used to make an infusion.

What does pimbina taste like?

This unique fruit can be eaten raw or cooked, and was once used in jellies and preserves to replace cranberries. Anchor or red dye were also made from it. Its smell is particular, but fortunately its aromas in the mouth are not similar. This berry is tart, a little sour, which is why it is mixed with other ingredients to balance the flavors. It mixes well with chicken or in sweet recipes like pies. It is a fruit very appreciated by partridges, which feed on it during the winter. Pimbina is also available in the form of an infusion with the fruit of the rose (rosehip).
