What is thuja?

Thuja, also called western cedar or white cedar, is a tree found in abundance in Quebec forests and which gives off a very camphorous aroma. For a long time, First Nations have used it to treat headaches, fever, inflammation and rheumatism problems. Its branches are also antiseptic and are therefore antiviral.

It is used as an infusion to combat bronchitis, colds, respiratory problems and is sometimes present in certain cough syrups. In addition, it is also possible to use it in steam baths as a substitute for eucalyptus.

What does thuja taste like?

This very fragrant plant gives off aromas of resin, but quite different from the smell of fir or spruce trees. Its taste is very balanced with citrus notes. Slightly sweet, it is used whole to flavor soups or in powder form to add to bread and biscuit dough. This foliage is a good source of vitamin C to try!
